Jacob's Cattle Beans
The exact origin of this variety is disputed, but it was presumably cultivated by the First Passamaquoddy People in the Maritimes.
Broad beans are eaten raw when young or used as dried beans when mature. In addition to the unique beauty of the seeds, their mild and creamy flavor makes them an ideal variety for soups or cassoulets.
