Spanish climbing beans
Certified organic by Québec Vrai.
These very robust climbing plants form a lovely green wall covered in red-orange flowers that are a favorite of hummingbirds. The beans produce long pods that can be eaten green when young or as dried beans. The dried beans have a beautiful contrast of black speckled with mauve.
To harvest dried beans, wait until the pods are dry and brittle. If the season is too short or the autumn is wet, it is possible to harvest the entire plants and dry them in a warm, well-ventilated place. Once the pods are completely dry, tread them down and then use a fan to separate the beans.
